Menlyn Buffet Refresh

A busy buffet site in Menlyn needed better hot holding, cleaner service flow and equipment that could keep up with breakfast and lunch peaks. We supplied and positioned new chafing sets and a bain marie, then adjusted the layout so staff could move faster with less spillage and less heat loss.

What the Menlyn team needed from the serving line

The client was a high-traffic buffet venue in Menlyn, Pretoria serving hotel style breakfast and lunch service to office guests, families and weekend traffic. Their old holding setup was uneven. Some pans ran too hot, others cooled too quickly, and the serving counters created a bottleneck at peak times. Staff were spending too much time lifting lids, topping up trays and moving around one another.

The brief was practical: keep food within safe holding temperature, speed up plate flow and make the line easier to clean at the end of service. They also wanted equipment that would cope with Gauteng power interruptions and regular daily use without constant attention. Because this was a customer-facing space, appearance mattered too. The client wanted a neat front-of-house finish that looked organised, not pieced together.

We started with a site assessment and measured the available counter runs, power points and traffic paths. The team also checked how the kitchen handed off food to the buffet, because a serving upgrade only works when the back-of-house layout supports it. The main issue was not only the equipment, but the distance between cooking, holding and service. That extra few metres were costing time and heat.

The brief, constraints and how we planned the upgrade

The space had a fixed counter footprint and no room for a major rebuild. We had to work around existing finishes, existing electrical points and the restaurant’s trading hours. The client could not afford long downtime, so the plan had to be done in stages. We also had to keep the route clear for trolley movement and avoid placing hot equipment where staff would brush past it during rush periods.

Another constraint was load shedding. The site needed equipment that could recover quickly after interruptions and hold temperature without creating excessive energy draw once power returned. The venue also sits in a part of Pretoria where service standards need to stay high through dry winter months and humid summer spells, so the holding equipment had to be easy to clean and practical for daily wipe-downs.

  • Maintain safe hot holding during breakfast and lunch peaks
  • Improve plate flow and reduce queue build-up at the buffet
  • Fit within the existing counter line, with no major civil work
  • Allow fast cleaning at close of service
  • Keep the layout suitable for power interruptions and day-to-day abuse

We proposed a mixed holding setup rather than one oversized unit. That gave the kitchen more control over different dishes and made it easier to swap menu items without disturbing the whole line.

What we supplied and installed

We supplied stainless steel chafing sets for the main buffet pans, together with a bain marie for sauces, vegetables and items that needed steadier heat. The chafing units were chosen for their practical depth and easy handling, and the bain marie was matched to the service counter so the staff could replenish from the rear without crossing the customer side.

The holding section was arranged to support a clear sequence: plates first, hot mains second, sides and sauces after that, then returns and clearing points further along. This reduced backtracking and stopped people from reaching over one another. The service counter also received small repositioning work so that condiment placement and pass-through points made more sense. Nothing dramatic, just the kind of change that makes a buffet feel calmer and less cramped.

  • Chafing sets for consistent hot holding across main dishes
  • Bain marie for sauces and temperature sensitive items
  • Counter re-layout for smoother guest movement
  • Positioning and levelling of all holding equipment
  • Handover guidance for staff on refill order and safe use

We also checked the electrical load at the point of use and confirmed that the line would cope with normal operating demand. The installation was done cleanly, with final positioning set to allow for quick removal during deep cleaning. That matters more than people think. If a unit is awkward to lift, it gets neglected and that creates maintenance problems later on.

Project timeline from assessment to handover

The full project ran over three weeks. Week one was site assessment, measurements and quote approval. Week two covered supply, prep and any workshop checks needed before delivery. Week three was delivery, positioning, final layout tweaks and handover training with the kitchen team.

Because the venue was trading, we staged the work around quieter periods and avoided the main service rush. The team also tested the traffic flow with staff before the first full service run, then made small changes to spacing around the buffet ends. That saved time later and reduced confusion for the wait team.

We like these short projects when they are planned properly. They are quick enough to keep disruption low, but detailed enough to fix the real issue instead of just replacing old equipment and hoping for the best.

Results after the first service cycles

After the refresh, the buffet line held temperature more evenly and staff had a clearer sequence for loading and clearing. Breakfast service in particular became easier because hot items could be replenished in smaller batches. The team reported less waiting at the pass, less clutter around the counter and fewer complaints about items cooling too fast.

The new layout also made closing time simpler. Because the holding equipment was placed with cleaning access in mind, the team could strip, wipe and reset the area faster. Over the first few service cycles, that translated into less wear on pans and less time spent managing the same problem twice. Small change, real benefit.

For a venue like this, the result is not only about food temperature. It is about the guest experience, the staff rhythm and the look of the serving line. The refreshed setup gave them all three.

What we would do again on a similar buffet project

If we were doing the same type of upgrade again, we would start with traffic flow before choosing the final equipment mix. Too many buffet lines get designed around the units first and the movement second. That usually leads to pinched corners, awkward serving angles and staff standing in the wrong place.

We would also keep the focus on maintainability. In a busy Pretoria site, with daily service and regular power interruptions, equipment has to be easy to reach, easy to clean and easy to service. If a unit needs special attention every week, it is not a good fit for a busy front-of-house line.

For Menlyn, the simple formula worked best: practical hot holding, clear movement, reliable installation and a handover the staff could use straight away. That is what we would repeat on the next buffet refresh, whether it is in Menlyn, Centurion or Midrand.

What clients say

Questions we get asked

Can you plan a buffet upgrade around existing counters?

Yes. We measure the available space, check power points and work out the serving flow first, then match the equipment to the layout.

Do you handle installation and staff handover?

We do. Our team positions the equipment, checks the setup and shows staff how to use, clean and refill it properly.

Can you assist with used catering equipment as well?

Yes. We source used equipment where it makes sense, and we can also quote on new items, servicing and workshop refurbishment.
